Chimarrao tradizionale del produttore brasiliano Yacuy, contenente foglie polverose finemente macinate e steli di media grandezza. Ha un aroma erbaceo molto specifico e distinto con note di ortiche, ma è anche dolcemente cremoso. L'infusione ha un colore verde brillante, e i toni erbacei freschi e di prato predominanti sono nuovamente sottolineati da una base dolce e cremosa. Il chimarrao differisce significativamente per colore, consistenza e sapore dalla yerba mate argentina, paraguayana o uruguaiana e somiglia più a un tè verde matcha – una polvere fatta da foglie finemente tritate con una piccola quantità di steli. Di solito viene confezionato sottovuoto entro la prima settimana dalla raccolta, mantenendo un livello più alto di clorofilla, che gli conferisce un colore verde neon. Come suggerisce il nome, questa è yerba mate biologica coltivata senza l’uso di pesticidi e fertilizzanti chimici, il che le permette di resistere a molte infusioni – può essere versata fino a dieci volte in una calabaza. Il prodotto ha certificazioni per alimenti biologici: Certificación Orgánica Brasil e ECOCERT BRASIL. Poiché il mate è molto polveroso, è consigliabile avere una buona bombilla e evitare di muoverlo troppo durante la bevuta.
