Tie Guan Yin (also known as Ti Kuan Yin, Iron Buddha, or Iron Goddess of Mercy) is among the most beloved oolong teas in China and in many parts of the world. It hails from Anxi County in Fujian province. The “Golden Crown of the Iron Goddess” is a premium-grade Tie Guan Yin picked in the first half of April, roughly two weeks before the main spring harvest begins. At that time, the buds and leaves are still small, requiring many of the processing steps to be done entirely by hand. Particular care is devoted to temperature control during roasting. This is a rare and exceptional grade of Tie Guan Yin, successfully produced only once every few years.
