Il tradizionale chimarrao del produttore brasiliano Yacuy contiene foglie in polvere finemente macinate (75%) e steli di dimensioni medie (25%). Il chimarrao si differenzia significativamente per colore, consistenza e sapore rispetto alla yerba argentina, paraguayana o uruguayana, assomigliando di piu a un te matcha verde - una polvere di foglie finemente tritate con una piccola quantita di steli. Di solito e confezionato sottovuoto entro la prima settimana dopo il raccolto, mantenendo un livello di clorofilla piu elevato, che gli conferisce un colore verde neon brillante. La bevanda ha un sapore eccezionalmente delicato ma intenso e forti proprieta stimolanti. Il suo colore verde fresco e distintivo e dovuto alla rapida lavorazione immediatamente dopo il raccolto, con un'essiccazione molto veloce senza lunghe fasi di invecchiamento. Il sapore e l'aroma presentano prevalentemente note erbose tipiche. Per il chimarrao, e consigliabile utilizzare una buona bombilla, che non dovrebbe essere spostata durante il sorseggio. Il marchio Yacuy e stato fondato nel 1948 ed e particolarmente popolare nel suo paese d'origine, il Brasile, e nel vicino Uruguay.
