Traditioneller Chimarrao des brasilianischen Herstellers Yacuy, der fein gemahlene pulverförmige Blätter und mittelgroße Stängel enthält. Er hat ein sehr spezifisches, unverwechselbares grasiges Aroma mit Anklängen von Brennnesseln, ist dabei aber auch cremig süß. Der Aufguss hat eine leuchtend grüne Farbe, und die dominierenden frischen grasigen und wiesenartigen Töne werden erneut von einer süßen und cremigen Basis unterstrichen. Chimarrao unterscheidet sich deutlich in Farbe, Textur und Geschmack von argentinischem, paraguayischem oder uruguayischem Yerba Mate und ähnelt eher einem grünen Matcha-Tee – einem Pulver aus fein gehackten Blättern mit einem kleinen Anteil an Stängeln. Er wird üblicherweise innerhalb der ersten Woche nach der Ernte vakuumverpackt, wodurch ein höherer Chlorophyllgehalt erhalten bleibt, der ihm eine neongrüne Farbe verleiht. Wie der Name schon sagt, handelt es sich um biologischen Yerba Mate, der ohne den Einsatz chemischer Pestizide und Düngemittel angebaut wird, was ihm erlaubt, viele Aufgüsse zu überstehen – er kann bis zu zehn Mal in einer Kalebasse aufgegossen werden. Das Produkt ist zertifiziert für Bio-Lebensmittel: Certificación Orgánica Brasil und ECOCERT BRASIL. Da der Mate sehr pulverig ist, lohnt es sich, eine gute Bombilla zu verwenden und ihn beim Trinken nicht zu stark zu bewegen. Das Getränk hat einen außergewöhnlich sanften Geschmack und recht starke anregende Eigenschaften. Seine intensive grüne Farbe ist auf die schnelle Verarbeitung unmittelbar nach der Ernte und das sehr schnelle Trocknen ohne lange Lagerung zurückzuführen.
