A legend found in manuscripts from 575 A.D. tells of an Ethiopian goat herder named Kaldi, who was amazed when he saw the energizing effect that the leaves and fruits of a common bush in the area had on his herd. After eating, the animals skillfully climbed the mountains and showed great endurance. Kaldi wanted to taste its fruit as well and confirmed the wonders of this plant. This is one of the earliest stories about the history of coffee, which is now one of the most consumed beverages in the world. Kaldi Café Gourmet was born with the spirit of this legend and takes care of every detail, from planting to harvesting, from the careful selection of beans needed for roasting to obtaining a unique, exclusive coffee. KALDI is a coffee with an acidity reminiscent of citrus fruits, qualities highly sought after by the best coffee connoisseurs. The beans are selected using an infrared electronic system, where each one is carefully analyzed. Only beans from ripe fruit are used, all green, rotten, burnt, and fermented beans, which cause bitterness and noticeable flavor distortion in regular coffees, are discarded. Additional care includes operating roasters with only 15 kg at a time to achieve the maximum quality of this true specialty coffee.
