La saveur dominante de ce maté est la citronnelle. Il présente également des notes de camomille et d'anis étoilé. Ce maté vert est pratiquement sans amertume. La boisson a un gout exceptionnellement doux et des propriétés stimulantes assez fortes. Sa couleur verte intense est due a un traitement rapide immédiatement apres la récolte, avec un séchage tres rapide sans vieillissement prolongé. Il est emballé sous vide, et les feuilles sont grossierement moulues pour préserver la saveur a long terme. La marque Yacuy a été fondée en 1948 et est particulierement populaire dans son pays d'origine, le Brésil, et le pays voisin, l'Uruguay. La gamme de Yacuy comprend plus d'une douzaine de mélanges premium, dont une partie de la production est certifiée biologique. La yerba maté Yacuy est récoltée a partir d'arbres sauvages dans le bassin du fleuve Iguaçu, qui traverse le parc national éponyme dans l'État brésilien du Paraná.
