Chimarrao tradicional del productor brasileno Yacuy, que contiene hojas finamente molidas y tallos de tamano mediano. Tiene un aroma herbáceo muy específico y distintivo con toques de ortigas, pero también es cremosamente dulce. La infusión tiene un color verde brillante, y los tonos frescos herbáceos y de pradera se subrayan nuevamente por una base dulce y cremosa. El chimarrao difiere significativamente en color, textura y sabor del yerba mate argentino, paraguayo o uruguayo y se asemeja más a un té verde matcha: un polvo hecho de hojas finamente picadas con una pequena cantidad de tallos. Generalmente se sella al vacío dentro de la primera semana después de la cosecha, manteniendo un nivel más alto de clorofila, lo que le da un color verde neón. Como su nombre indica, este es yerba mate orgánica cultivada sin el uso de pesticidas y fertilizantes químicos, lo que le permite soportar muchas infusiones: se puede verter hasta diez veces en una calabaza. El producto tiene certificaciones de alimentos orgánicos: Certificación Orgánica Brasil y ECOCERT BRASIL. Dado que el mate es muy polvoriento, vale la pena tener una buena bombilla y evitar moverlo demasiado mientras se bebe.
