El chimarrao tradicional del fabricante brasileno Yacuy contiene hojas en polvo finamente molidas (75%) y tallos de tamano mediano (25%). El chimarrao se diferencia significativamente en color, textura y sabor de la yerba argentina, paraguaya o uruguaya, asemejándose más a un té verde matcha: un polvo de hojas finamente picadas con una pequena cantidad de tallos. Generalmente se empaca al vacío dentro de la primera semana después de la cosecha, manteniendo un nivel más alto de clorofila, lo que le da un color verde neón brillante. La bebida tiene un sabor excepcionalmente suave pero intenso y fuertes propiedades estimulantes. Su distintivo color verde fresco se debe al rápido procesamiento inmediatamente después de la cosecha, con un secado muy rápido sin un largo envejecimiento en almacenamiento. El sabor y el aroma predominan con notas herbáceas típicas. Para el chimarrao, se recomienda utilizar una buena bombilla, que no debe moverse durante la ingesta. La marca Yacuy fue fundada en 1948 y es especialmente popular en su país natal, Brasil, y en el vecino Uruguay.
