Chimarrao tradicional del productor brasileño Yacuy, que contiene hojas finamente molidas en polvo y tallos de tamaño medio. Tiene un aroma muy específico y distintivo a hierba con toques de ortigas, pero también es cremosamente dulce. La infusión tiene un color verde brillante, y los tonos dominantes frescos de hierba y pradera se subrayan nuevamente con una base dulce y cremosa. El chimarrao difiere significativamente en color, textura y sabor de la yerba mate argentina, paraguaya o uruguaya y se asemeja más a un té verde matcha: un polvo hecho de hojas finamente picadas con una pequeña cantidad de tallos. Usualmente se envasa al vacío dentro de la primera semana después de la cosecha, manteniendo un nivel más alto de clorofila, lo que le da un color verde neón. Como su nombre indica, esta es yerba mate orgánica cultivada sin el uso de pesticidas y fertilizantes químicos, lo que le permite resistir muchas infusiones: se puede verter hasta diez veces en una calabaza. El producto cuenta con certificaciones para alimentos orgánicos: Certificación Orgánica Brasil y ECOCERT BRASIL. Dado que el mate es muy polvoriento, vale la pena tener una buena bombilla y evitar moverlo demasiado mientras se bebe. La bebida tiene un sabor excepcionalmente suave y propiedades estimulantes bastante fuertes. Su intenso color verde se debe al procesamiento rápido inmediatamente después de la cosecha y al secado muy rápido sin un largo envejecimiento en almacenamiento.
